Chairman of Gastronomy and Culinary Art Department of İstanbul Topkapi University

Prof. Dr. Aziz EKŞİ was born in Ordu/Mesudiye in 1947. He received both his BS and PhD degrees from Food Science and Technology Department of Ankara University in 1968 and 1974, respectively. 

 In 1977 he was awarded Humboldt Research Scholarship and spent 2 years in Technical University of Munich, Germany. He became an asociated  professor  in 1979 and full professor  in 1988 in Ankara University. 

He  was the   director of Institute of Applied Sciences from 1996 to 1999, and the chair of  Food Engineering Deparment of Ankara University from 1991 to 1994 and from 2006 to 2014. 

He lectures food chemistry, food quality control and  shelf-life of foods at the university. His scientific publications are mostly about the chemical composition of foods and especially fruit juices, and authenticity control of foods. 

He also was the chair of Food Standards Group of Turkish Standard Organisation (1980-84), president of Food Technology Association (1981-84), president of  the MEYED/Fruit Juice Industry Association (1993-2008), member of Advisory Board of IFU (2002-06), member of AIJN/COPEG (2006-08), and  the chair  of the Turkish Food Codex/Food Labelling Commission (2007- 2016). 

In 2014, he was retired from Ankara University and started to  lecture  in Gastronomy Department of European University of Lefke (2014-18). He has been  teaching in Gastronomy Department of İstanbul Topkapi University since 2018.
